THIS IS TYPICAL KONKANI DISH PREPARED AS AN ACCOMPANIMENT WITH WHITE RICE. KODDEL IS A COCONUT BASED GRAVY WITH LOTS OF GARLIC TEMPERING.HERE I USED WHITE BEANS WHICH IS CALLED TINGALAVARO AND CHINESE POTATO WHICH IS CALLED KOOK IN KONKANI.YOU CAN USEANY OTHER PULSES LIKE LOBIA,RAJMA ETC WITH YAM,RAW JACKFRUIT OR MALABAR SPINACH...ALL TASTES AWESOME!!
1 cup soaked white beans
1/4 cup peeled and chopped kooka/ chinese potato
Salt to taste
FOR THE MASALA PASTE:
1 cup coconut gratings
4-5 red chillies roasted in lil oil
Grind the above ingredients into a fine paste
FOR THE TEMPERING:
4-5 tsp oil
8-10 crushed garlic cloves
- Cook the soaked white beans and chopped kooka in cooker with 1 cup water for 3-4 whistles
- Transfer it in a vessel,add salt,masala pasteand water according to your taste and make it boil for 5-10 mins
- Temper with thementioned ingredients
- Serve hot with hot rice !!
