Narali Bhaat / Sweet Coconut Rice
INGREDIENTS:
1/2 cup rice
1 cup water
2 tblsp ghee
1 tsp cardamom pdr
1 cup jaggery
1 cup grated fresh coconut
8-10 cashew nuts
8-10 raisins
PROCEDURE:
- Wash rice, add water and cook in cooker for 3-4 whistles
- Add ghee in a pan and heat it sufficiently, add cashews n raisins into it
- Fry for a second and add grated coconut , crushed jaggery and mix well
- Cook until the jaggery melts completely
- Now add cooked rice and mix gently all the ingredients
- Cover the vessel and cook bhaat for 10- 15 mins on a low flame
- After cooking open the lid and add the cardamom pdr into it
- Garnish with roasted cashews and raisins and serve hot !!
