Jain Aloo Gobi (without onion garlic)


INGREDIENTS:
1 boiled potato cut into cubes
1 cup gobi florets
5 tsp oil
1 tsp jeera / cumin seeds
1/2 tsp turmeric pdr
1 tsp red chilli pdr
1 tsp garam masala pdr
Salt to taste
2 tsp kasuri methi
Chopped coriander leaves

FOR THE MASALA PASTE:
2 roughly chopped tomatoes
6 cashew nuts
1/2 inch ginger
Grind these into a fine paste and keep aside.

PROCEDURE:

  • Wash the gobi florets and put in wam water with salt for 15 mins
  • After 15 mins drain all the water and shallow fry it in 2 tsp oil with little salt ,till it becomes tender
  • Transfer it in a plate and shallow fry potato cubes with little salt till it becomes light brown
  • Put the potato in the plate. Heat remaining oil in the same pan, add jeera,hing, turmeric powder, saute for a second, add the ground masala paste and fry till oil separates from the sides
  • Now add the spice powders and fry for 2-3 mins
  • Add the cooked aloo and gobi florets, kasuri methi, salt if needed and 1/4 cup water
  • Let it cook for 5 mins, garnish with chopped coriander leaves 
  • Serve hot with roti.
