Pumpkin Core Tambli
INGREDIENTS:
Pumpkin core/ dudde gheeru / Sihigumbalkayi thirulu (discard the seeds)
1 oil
1/2 cup grated fresh coconut
1/2 green chilli
1 small red chilli
1 tsp jeera/ cumin seeds
1/2 cup fresh curds
Salt to taste
FOR THE TEMPERING:
2 tsp oil
1 tsp mustard
curry leaves
1 red chilli bits
Pinch of hing / asafoetida
PROCEDURE:
- Separate the seeds from the core and chop it roughly
- In a pan heat 1 tsp oil and fry green chilli, red chilli and jeera and remove it on a plate
- In same kadai roast the chopped pumpkin core for 2-3 mins, till its colour changes
- Remove it and grind with coconut,salt into a fine paste
- Add curds to the ground paste,add water and adjust the consistency
- Check the salt and add the tempering with the mentioned ingredients
- Serve with rice.
