Mixed Vegetable Kootu



Mixed Vegetable Kootu. A traditional, festive recipe of Kannada Brahmins, tastes awesome with Rice. It has mixed veggies, tender pea nuts, with the masala of fresh coconut and spuces freshly ground.

INGREDIENTS:
3 toor dal
2 tblsp peanuts
Salt to taste
1/2 cup chopped carrot
1/2 cup chopped beans
1/2 cup potato peeled and cubed
1/2 cup pumpkin cubed
1/2 cup madras cucumber cubed
1/4 cup green peas
1/2 cup water
Salt to taste
1/2 tsp turmeric pdr

TO BE GROUND INTO PASTE

2 tsp oil
1 tblsp coriander / dania seeds
1/2 tsp cumin / jeera
1/4 tsp fenugreek seeds/ methi
2 tsp chana dal
4 dry red chillies
1/4 cup fresh grated coconut

FOR THE TEMPERING:
2 tblsp oil
1 tsp mustard
Curry leaves
2 tsp urad dal
1 red chilli

PROCEDURE:

  • Washtoor dal and cook in cooker along with peanuts,salt and 1 cup water, cook until dal is cooked nicely
  • Mash the dal and keep aside. Add all the veggies chopped in cooker along with salt,turmeric pdr, 1 cup waterand pressure cookuntil they are softenedHeat oil in a pan add coriander seeds, cumin seeds, methi seeds, chana dal, dry red chillies and fry until they turn light brown
  • Turn off the flame, grind it with coconut once it comes to room temperature
  • Add Water and make a smooth paste
  • Now in a broad vessel put the cooked veggies,dal,masala pasteand cook for 10- 12  minson low heat.
  • Add more water if needed and adjust the consistency according to your taste
  • Prepare the tempering and add it to the prepared kootu
  • Serve hot with rice and papad.
  • If you plan to serve it with rice you can keep it thinnerand if you want to serve it as a side dish for chapati tou can keep it thicker
