malpua


MALPUA is a traditional Bihari and Rajastani dessert which is mostly prepared on Holi festival.This is a deep fried pancake dipped in sugar syrup and garnished with lots of pistas and almonds.

INGREDIENTS:

1/2 ltr Milk
50 gms mawa
3 tblsp maida
1 tsp cardamom powder
Ghee for deep frying
3 tblsp almonds

For sugar syrup:
2 cups sugar
2 cups water
saffron colour
PROCEDURE:

  • Boil milk till it reaches thick consistency
  • Add grated mawa and mix well
  • Bring it to room temperature
  • Reserve 2 tblsp sugar and add water to the remaining sugar and make one string syrup 
  • Add saffron colour to the syrup
  • Add maida ,cardamom powder and2 tbsp reserved sugar to the reduced milk and mix well to make a batter of pouring consistency
  • Heat ghee and pour one ladle of batter to form a pancake
  • Cook on slow flame and urn when both sides are cooked
  • Drain and dip them in sugar syrup 
  • Garnish with chopped almonds
