Palak Rice
INGREDIENTS:
2 cups basmati rice
5 tsp oil or ghee
10 spinach leaves (palak)
2 sliced onions
1 tsp ginger garlic paste
Salt to taste
3 tsp corn flour
Oil for deep frying
Make a mixture of;
1 tsp pav bhaji or biryani masala,1/2 tsp turmeric powder,1.5 tsp chilli powder,3 tsp chopped coriander leaves,1/4 cup curd and keep
PROCEDURE:
- In cooker take oil and saute onion slices for 5 minutes
- Add curd mixture and fry
- Put rice and stir well
- Add 3 1/2 cups of water ,salt to taste and cover the lid and cook (2 whistles)
- Cup palak leaves into fine strips, add salt and sprinkle 3 tsp corn flour
- Deep fry the strips into crisp
- Garnish the rice with fried spinach strips before serving
Note:the crispy and crunchy palak leaves gives added taste to this rice .
