Dahi Baingan


INGREDIENTS:

4 small sized brinjals (baingan)
2 finely chopped onions
2tsp + 3 tsp oil
1 cup fresh curd
2 tsp besan (bengal gram flour0
2 tsp red chilli powder
2 tsp coriander powder
1 tsp cumin powder
1/2 tsp turmeric powder
1/2 tsp garam masala powder
salt to taste
1/4 cup milk
1 tsp  kasuri methi
chopped coriander leaves

PROCEDURE:

  • Wash and make 4 slits on brinjals
  • In a pan heat 2 tsp oil and put baingan with little salt and cook with a covered lid
  • When it is cooked transfer them in a bowl and keep aside
  • In a bowl mix  ingredient n0 4 o 11 and keep
  • In the same pan heat oil and saute chopped onions and fry till translucent
  • Add curd and masala mixture and cook for 5 minutes
  • Add roasted brinjals,salt to taste ,kasuri methi and milk
  • Addwater if needed
  • Boil it for 5 minutes and garnish with chopped coriander leaves
  • Serve hot with roti ,naan .
