Mexican Corn Rice with Stir Fried Veggies


INGREDIENTS:
2 cups basmati rice
2 sliced onions
6 tsp ghee or oil
1/2 cup corn kernels
Salt to taste
2 tsp lime juice

FOR THE MASALA;
3 green chillies
1/2 capsicum
6 garlic cloves
1 cup chopped coriander leaves
dry roast in a pan or on gas flame capsicum,garlic and onion (with skin)
Remove the skin of onion,garlic and capsicum and wipe witha cloth or tissue
Grind with green chillies and coriander leaves  and keep aside

PROCEDURE:

  • In cooker heat oil or ghee and saute sliced onions till transparent
  • Add masala and fry for 5 minutes
  • Put washed rice and fry for 5 minutes
  • Add corn,salt to taste,and 3 1/2 cups water and close the lid 
  • Switch off the ga after 2 whistles
  • Open the lid and add lime juice and mix gently with a fork
  • serve with raita or stir fried veggies

STIR FRIED VEGGIES RECIPE:
2 cups chopped veggies like zuchchini,cauliflower,carrot,baby corn
2 tsp oil 
2 tsp chopped garlic
3 tsp CHING'S SCHEZUAN CHUTNEY

PROCEDURE:
  • In a pan heat oil and saute garlic chopped
  • Add all the chopped veggies and little salt 
  • Cover and cook for 5 minutes
  • Add schezuan chutney and toss well
NOTE: veggies should be little crunchy.
