Soorna Nonche

SOORAN  is also called YAM in English and SUVARNA GADDE in Kannada. This is a traditional Konkani dish.Little spicy like any other pickle or gojju. You can also use bitter gourd or potato instead of yam.this pickle goes well with hot rice or idli,dosa also.
INGREDIENTS:

1/2 cup finely chopped sooran cubes
Salt to taste
oil for deep frying

For masala:
In 1 tsp oil roast 2 tsp coriander seeds,4 fenugreek seeds,little asafoetida,1 tsp mustard and keep in a bowl. in same oil roast 8 kashmiri or byadgi red chillies into dark brown colour
.Grind chillies with little tamarind and roasted coriander,methi seeds into a fine paste.

PROCEDURE:

  • Cut sooran into small cubes and apply little salt 
  • Keep for 1/2 an hour 
  • After 1/2 an hour squeeze it and deep fry till it becomes crisp
  • In a kadai take 2 tsp oil ,add masala and fry for 5-10 minutes
  • Take masala in a bowl,add water  and adjust the consistency according to your taste(semi solid)
  •  When the masala comes to room temperature add fried sooran pieces and mix well
  • Add tempering with 2 tsp oil,1 tsp mustard and some curry leaves
