Potato Spinach Rice

1 cup basmati rice
2 medium sized potatoes cut into wedges or fingers
2 sliced onions
2 tsp + 6 tsp oil or ghee
whole garam masala (bay leaf,elaichi,clove,cinnaon)
1 cup finely chopped spinach(palak)
1 tsp red chilli powder
 1 tsp garam masala powder
1/2 inch turmeric powder2
2 tsp lime juice
chopped coriander leaves
Salt to taste

GRIND TO FINE PASTE :  3 green chillies,1/2 inch ginger,5 garlic cloves,2 tsp cumin seeds (jeera)


  • In a pan heat 2 tsp oil and shallow fry potato fingers with salt and 1  tsp red chilli powder  with a covered lid till it is cooked
  • In cooker take 6 tsp oil and saute sliced onions till it becomes translucent.
  • Put ground masala ,whole garam masala  and fry for 3 minutes
  • Add chopped spinach and fry for 2 minutes
  • Put garam masala,turmeric powder ,rice and fry for 5-6 minutes
  • Add lime juice,salt to taste ,give a stir and put 1 1/2 cups of water
  • Close the lid and switch off the gas after 2 whistles
  • After steam is released open the lid,add chopped coriander leaves ,fried potato fingers and mix gently with a fork
  • Serve hot with any raitha.
