Coriander Rice


INGREDIENTS:
2 cups cooked rice
1/4 cup crn kernels
1/4 cup green peas
Salt to taste
2 tsp lime juice

FOR TEMPERING:
4 tsp oil
1 tsp mustard
curry leaves
1 sliced onion

FOR GREEN PASTE:
1/2 cup coriander leaves
3 green chillies
1/2 inch ginger
5 garlic cloves---grind to a fine paste and keep aside

PROCEDURE:

  • In a pan heat oil ,put mustard
  • when it starts crackling, add curry leaves,sliced onion and saute for 5 minutes
  • Put the ground paste and fry well
  • Add corn kernels and peas ,and cook for 5 minutes with a lid covered.
  • Put the cooked rice ,salt and lime juice and stir well
  • Garnish with chopped coriander leaves and serve with raita.
