Alleppy Veg.Curry
The author of this recipe is Maste chef Sanjeev Kapoor !!! This is a very good side dish for rice ad roti!!
INGREDIENTS:
Mixed veggies chopped and boiled 2 cups (veggies used are cauliflower,potato,carrot,green peas and beans)
Salt to taste
For the Masala paste:
1/4 cup grated coconut
1 chopped tomato
2-3 pieces of raw mango
1/2 tsp turmeric powder
4 red chillies
Grind the above ingredients into a fine paste
For Tempering:
2 tsp oil
1 tsp mustard
curry leaves
PROCEDURE:
- Take boiled veggies in a kadai and add salt and masala paste to it
- Make it boil for 5-10 minutes
- Temper it with the above mentioned ingredients and serve hot with roti or rice
