Mexican Cheese Omelette






INGREDIENTS:
2 eggs
1/2 tsp pepper pdr + 1/2 tsp
2 tblsp grated cheese
1/4 cup milk
2 tblsp capsicum finely chopped
2 tblsp onion finely chopped
salt to taste
1/2 tsp oregano
2 tsp boiled potato cut into small cubes
2 tsp oil

PROCEDURE:

  • In a bowl beat the eggs and add salt to taste,pepper pdr,grated cheese,milk and mix well
  • In a pan put oil and saute onion,capsicum and boiled potato with salt and pepper for 5 mins
  • Add oregano and pour the egg mixture and spread 
  • Cook on both the sides and serve hot with toasted bread
