Bhindi do -Pyaza

INGREDIENTS:
1/4 kg bhindi/okra/lady's finger
4 tsp  oil
2 onion slices
2 slit green chillies
1/2 tsp of sugar
Salt to taste
1/4 capsicum cut into fine julliennes
1 tsp lime juice
1 tblsp fresh cream
2 tblsp curds
chopped coriander leaves

FOR THE MASALA:
1 roughly chopped onion
1 chopped tomato
4 garlic cloves
1 1/2 tsp red chilli pdr
1/2 tsp turmeric pdr
Grind the above ingredients into a fine paste.

PROCEDURE:

  • Wash and wipe the bhindis and cut into 2 inch pieces
  • In a kadai heat2 tsp oil and fry bhindis with salt till it is cooked
  • Transfer the cooked bhindis into a bowl
  • In same kadai heat 4 tsp oil and saute sliced onions and green chillies till the onions turn into light pink in colour
  • Put the masala and fry till the raw smell goes
  • Add the fried bhindis,sugar,salt to taste,cream, curds and lil water to adjust the consistency
  • Cook for 5 mins and add capsicum ,lime juice  and boil for 3 mins
  • Garnish with chopped coriander leaves and serve hot with roti
