Mongolian Baby Corn

INGREDIENTS:
1 packet baby corn (15 nos)
1/2 cup onion cut into cubes and separate the layers
2 tblsp spring onion greens
1/4  cup capsicum cut into cubes
6 garlic cloves finely chopped
1/2 inch ginger finely chopped
1 tomato
2 green chillies
1 tsp red chilli sauce
2 tsp tomato ketchup
1/2 tsp pepper pdr
1/2 tsp red chilli pdr
1 tsp vinegar
1 tsp sugar
5 tsp oil + oil for deep frying
salt to taste
chopped coriander leaves for garnishing 
2 tsp corn flour mixed with 1/4 cup water

FOR THE BATTER:
3 tblsp corn flour
1 tsp ginger garlic paste
1/2 tsp pepper pdr
Salt to taste 
Mix the above ingredients with little water and make a semi thick batter 

PROCEDURE:
  • Wash and cut the corn into 2 pieces  and  mix with the batter
  • Heat oil and deep fry corns into crisp fritters and keep aside
  • Crush the tomato and green chillies and keep  aside
  • Heat a pan and fry chopped garlic ,ginger  till light brown
  • add onion chunks and saute till transparent
  • Put the tomato onion paste and fry for 5 mins
  • Add capsicum cubes Spring onion,,salt and saute for 2 mins
  • Add chlli pdr,pepper pdr,chilli sauce,ketchup.vinegar, sugar and mix well
  • add the corn flour slurry and let it boil till it becomes thick 
  • Now put the fried corn fritters,and toss well
  • Garnish with chopped coriander leaves
