Baingan ki Sabji

INGREDIENTS:
10 nos baby brinjals
1 tsp mustard
2 small finely chopped onions
1 chopped tomato
1/2 inch ginger crushed
5 garlic cloves crushed
2 green chillies crushed
curry leaves
1/2 tsp turmeric pdr
2 tsp sambar masala pdr
2 tblsp roasted n crushed peanuts
5 tsp oil
Salt to taste
Little jaggery  to taste(optional)
chopped coriander leaves 

PROCEDURE:

  • Wash and cut the brinajals into 4 pieces and put in salt water
  • In cooker heat oil  ,put mustard 
  • when it starts crackling add curry leaves,crushed ginger,garlic,green chillies and fry for 3 mins
  • Add chopped onions and saute till light brown in colour
  • Add chopped tomatoes,brinjal pieces,salt,jaggery ,1/2 cup water and cook for 1 or 2 whistles
  • After the steam is released open the lid ,add peanut pdr,sambar [dr and mix well
  • cook for 5 mins ,add chopped coriander leaves
  • Serve hot with roti
NOTE:  You can add any masala powder of your choice ,like vangi baat pdr,rasam pdr,goda masala or garam masala according to your taste!!
