Cantola Stir Fry
INGREDIENTS:
4 cantolas/ phagil
2 potatoes
3 tsp oil
1 tsp mustard
1/2 tsp asafoetida/hing pdr
1/4 tsp turmeric/haldi pdr
2 tsp red chilli pdr
Salt to taste
Chopped coriander leaves
PROCEDURE:

PROCEDURE:
- Scrape the outer skin of cantola and cut into thin wedges
- Cut the potato into wedges and put both in water
- Heat the oil in a non stick pan ,add mustard ,when it starts crackling ,add hing pdr,haldi and put the cantola,potato wedges draining the water
- Cover and cook for 5mins
- Add salt and 1/2 cup water and cook till both are cooked
- Finally sprinkle chilli pdr and toss well
- Garnish with chopped coriander leaves and serve hot with rice or roti !!
