Mushroom Rice


INGREDIENTS:
1 cup basmati rice 
1/2 cup sliced mushrooms
6 tsp ghee or oil
2 sliced onions
1/2 tsp turmeric pdr
1 tsp garam masala or biryani masala
1 tsp vinegar
chopped coriander leaves for garnishing
5-6 mint leaves

FOR THE MASALA PASTE:
Take 1/4 capsicum ,apply oil on it and roast it on gas flame
Remove its black skin and grind it with 1/4 cup coriander leaves,3 green chillies,1/2 inch ginger,4 garlic cloves,2 cloves----Grind these into a fine paste

PROCEDURE:

  • Wash and soak rice in water for 15 mins
  • In cooker heat oil and saute onion slices till transparent
  • Add masala paste and fry till it loses raw smell
  • add all the spice powders and fry for a minute
  • Put the mushroom,salt and mix well
  • Add the rice draining all water from it
  • Fry rice for 5 mins,add vinegar,mint leaves and  11/2 cups water and close the lid
  • Cook for 2 whistles and switch off the gas
  • After steam is released open the cooker ,add chopped coriander leaves and genly mix with a fork or spoon
  • Serve hot with raita
