Capsicum Sabji


INGREDIENTS:
1 big capsicum cut into cubes
4 tsp oil
curry leaves
1 tsp mustard
1/2 tsp turmeric pdr
2 tsp red chilli pdr
1/2 tsp asafoetida/ hing pdr
1 finely chopped tomato
Salt to taste
2 tblsp roasted crushed peanuts
Chopped coriander leaves for garnishing

PROCEDURE:

  • In a pan heat oil ,add mustard and when it starts crackling put hing,haldi,curry leaves and fry for a minute
  • Add chopped tomato and fry for 5 minutes, followed by chilli powder
  • Put the chopped capsicum ,salt to taste,1/4 cup water and cook with a lid covered
  • When capsicum is almost cooked add roasted ,crushed peanuts and toss well
  • Garnish with chopped coriander leaves and serve hot with roti!!
