Corn n Spinach toast


INGREDIENTS:
8 bread slices
1/4 cup corn kernels
1 cup finely chopped spinach
5 finely chopped garlic cloves
2 tsp oil
Salt to taste
2 tblsp butter + 2 tblsp for toasting the sandwich
2 tblsp all purpose flour/ maida
3 tblsp milk
2 tblsp grated processed cheese
2 tsp chilli flakes
1 tsp mixed herbs or oregano

PROCEDURE:

  • In a pan heat oil and saute chopped garlic,corn and spinach with salt to taste  ,till spinach is cooked
  • Transfer it in a bowl and put 2 tblsp butter and when it melts add maida and fry for 3 mins  
  • add milk  and stir continuously till it becomes thick
  • add grated cheese and mix well
  • Add corn,spinach mixture,dried herbs,chilli flakes and salt if needed and toss well
  • Take bread slice and spead the mixture over it and cover with the other slice and press lightly
  • Heat tava  and toast the sandwich adding butter on both the sides
  • Serve hot with tomato ketchup!!
