Tarkari Kootu


Tarkari kootu  is nothing  but sambar or huli prepared with lots of veggies in Kannada Brahmin style!! One  extra ingredient used in this is peanuts which gives extra taste !!Recipe credit goes to my FB friend Kiranmayi Kamath :)

INGREDIENTS
- 1 big cup full of chopped Carrot, beans, ashgourd, cluster beans, cut into ½ “ length pieces.
a handful of groundnuts.
½ cup toor dal.

For grinding the masala;
1. 1 tbsp of coriander seeds
2. ¼ tsp jeera
3. 4-5 methi seeds
4. 4-5 pepper corns
5. ½ tsp chana dal

6. ½ tsp urad dal
7. ½” piece cinnamon
8. 2-3 Marathi moggu
9. Hing – size of chanadal
10. Red chillies – 4-5(I use byadagi chillies)
11. 3 tablespoon full grated coconut.
12. Small piece of tamarind
13. Jaggery – small piece
14. Salt – to taste
15. 1 tbsp oil
Method:
Fry all ingredients listed from 1 to 10 separately in little oil till u get a nice aroma. Once cooled, grind together all the fried ingredients along with coconut and tamarind to a smooth paste.
Pressure cook the vegetables, groundnut and tur dal. Mix the ground masala to the cooked veggies and tur dal, add salt and jaggery to taste, dilute the mix to desired sambar consistency and simmer it for 5 minutes on medium to low flame.Keep stirring to avoid burning. Prepare the seasoning with mustard, red chillies and curry leaves and add it to the sambar.
This is relished with piping hot rice and generous dollops of ghee 
If you are a vegetable lover, you can increase the quantity of vegetables
