Tomato Carrot soup


INGREDIENTS:
2 tomatoes
2 carrots
2 tsp oil
1 onion chopped
1 green chilli
1/2 inch ginger
3 garlic cloves
1 bay leaf
3 tsp fresh cream
2 tblsp coconut milk
Salt  and little sugar to taste
Pepper powder for serving

PROCEDURE:

  • Wash and roughly chop tomatoes and carrots
  • In cooker take oil and add bay leaf ,onion and saute for 5 mins
  • Add ginger,green chilli,garlic,chopped tomato carrot  with 1 cup water and cook for 2-3 whistles
  • Blend it in the mixer when it comes to room temperature (remove the bay leaf before blending)
  • Strain it if necessary
  • Add water and adjust the consistency
  • Add salt ,sugar and make it boil for 5 minutes
  • Add fresh cream,coconut milk and just give one boil and serve hot with pepper powder
