Vada Sambar

1 cup urad dal / skinless split white lentils
salt to taste
1/2 tsp crushed pepper corns or 2 crushed green chillies
2 sprigs curry leaves finely chopped
1 tsp asafoetida
Oil for deep frying


  • Soak dal in water for 5 6 hours or overnight ,wash well and grind into a smooth,fluffy batter in grinder
  • Dont add much water 
  • Transfer the batter in a bowl and add all the other ingredients 
  • Shape into medu vadas and deep fry in oil till it becomes crispy , on a medium flame
1cup boiled toor dal
1/2 cup shallots/ sambar onion
1 chopped tomato
1 cubed potato
3 tsp sambar pdr
Salt to taste
Chopped coriander leaves

for the tempering:
2 tsp oil
1 tsp mustard
curry leaves
1/2 tsp asafoetida pdr

  • Peel the onions and saute in 2 tsp oil with little salt, till it i cooked and becomes light brown 
  • Cook the tomato,potato in cooker with dal for 2 whistles
  • Transfer it in a vessel,add onions,salt and water to adjust the consistency
  • Add sambar powder and make it boil
  • Add the tempering with the mentioned ingredients,garnish with the chopped coriander leaves
  • Serve hot with vada!!
You can also use veggies if you want!!
