Thandai is a cold drink prepared on Holi festival !! It is prepared with a mixture of almonds,fennel seeds,watermelon seeds,pepper,cardamon,saffron,milk and sugar !!! this yummy recipe belongs to master chef Sanjeev Kapoor !!
INGREDIENTS:
1 .5 ltr Full cream milk
25 almond blanched and peeled
20 Cashew nuts soaked
30 pistas blanched and peeled
3 tblsp melon seeds soaked
3 tblsp poppy seeds (khus khus) soaked
Saffron/ kesar few strands
1.5 cups sugar
8-10 green cardamoms
1 inch stick cinnamon
8-10 black pepper corns
PROCEDURE:
- Grind together almonds,cashew nuts,pistas,melon seeds, poppy seeds with little milk to a fine paste
- Bring remaining milk to a boil in a pan ,add saffron and mix
- When the milk begins to boil,add sugar and simmer till sugar melts
- Grind cardamom,cinnamon ,black pepper to a fine powder
- Add the ground paste to the milkand mix well
- Simmer for 3-4 mins,add the powdered masalaand mix well
- Refrigerate it when it comes to room temperature , serve chilled !!!
