Chilli Aloo



INGREDIENTS:
3 medium sized potatoes cut into medium thin slices or cubes
oil for deep frying
3 tblsp cornflour
1/2 tsp red chilli pdr
Salt to taste

For the Sauce:
4-5 tsp oil
6 garlic cloves finely chopped
1/2 inch ginger finely chopped
2 green chillies finely chopped
1/2 cup spring onion white parts sliced
1/2 capsicum sliced
3 tsp red chilli paste
2 tsp soya sauce
2 tsp tomato ketchup
1/2 tsp vinegar
3 tblsp spring onion greens
chopped coriander leaves
Salt to taste

PROCEDURE:

  • Wash and drain cut potatoes ,marinate with salt,cornflour,chilli pdr using little water 
  • Heat oil and deep fry the potatoes into crisp ones
  • In a pan heat oil, add chopped garlic,ginger,green chillies and fry till garlic becomes brown 
  • Put the spring onion whites,saute for 2 mins
  • Add capsicum and fry for 2-4 mins,followed by the sauces,chilli paste and vinegar
  • Saute for 5 mins,add little water and mix well
  • Put salt,fried potatoes and toss well
  • Garnish with chopped spring onion greens and coriander leaves
  • Serve hot with fried rice,noodles or any other flavoured rice!!
To make chilli paste Soak around 10 red chillies in warm water for 10 mins and grind with salt and 4-5 garlic cloves ,into a smooth paste.Store this in freezer !!
