Gulla Bolu Huli


Gulla is a variety of brinjal which is very popular in Udupi district, South  Karnataka..I got this recipe from my FB friend and blogger Mr. Kudpiraj ...Love all his recipes and the way he writes..Thanks Kudpi maam for the wonderful recipe!!

INGREDIENTS:
2 big gulla / brinjals
2 drumsticks
1/2 cup toor dal 
4 green chllies
tamarind lemon size
jaggery big lemon size
1/2 tsp turmeric pdr
4 tsp udupi sambar pdr
coriander leaves chopped
Salt to taste
INGREDIENTS FOR SEASONING:
1 tblsp coconut oil
1 tsp mustard
curry leaves
urad dal 2 tsp
asafoetida chickpea size
2 broken red chillies

PROCEDURE:

  • Wash and cut the stalk of gulla and chop along with skin into 1 inch cubes and drop in water
  • Wash ,shave drumsticks,cut into 2 inch pieces and drop in water
  • The above step of dropping them in water is essential to remove any bitterness within gulla and drumsticks
  • Pressure cook toor dal and mash lightly with a laddle
  • Boil gulla and drumsticks with salt ,turmeric pdr,tamarind pulp and just enough water (around 1 cup)
  • Cook it for 7 mins or till 3/4 is cooked
  • Add jaggery,green chillies,cooked dal and water to adjust the consistency of the gravy
  • Gravy should be thick,sticky and not too watery
  • Add sambar pdr and bring it to boil
  • Gulla pieces should be cooked perfectly for better taste,stiff and soft but not mushy
  • Add the seasoning ,chopped coriander leaves
  • Serve hot with hot rice and papad !!
