Pepper mushrooms with Carrot Rice
15 button mushrooms
5 tsp oil
2 finely chopped onions
8 finely chopped garlic cloves
curry leaves
1 tsp mustard
Salt to taste
Chopped coriander leaves
To make paste you need:
2 tsp oil
2 chopped onions
4 red chillies
2 tsp pepper corns
In oil fry the above ingredients till onion becomes transparent and grind it to a coarse paste,adding 3 tsp soya sauce,1 tsp vinegar without water
PROCEDURE;
- Wash and cut the mushrooms into quarters
- In a kadai heat oil ,add mustard,when it starts crackling ,add curry leaves,chopped garlic and fry till garlic becomes light brown colour
- Put the mushrooms,salt and cook on a high flametill they shrinks
- Add the ground onion paste and cook for another 5 mins
- Garnish with chopped coriander leaves and serve hot with any rice or pulav!!
CARROT RICE RECIPE:
INGREDIENTS:
1 cup basmati rice washed and soaked in water for 20 mins
6 tsp oil or ghee
1 sliced onion
2 slit green chillies
1 carrot chopped finely
1 tsp ginger garlic paste
1 tsp garam masala pdr
Salt to taste
1 tsp lemon juice
Chopped coriander leaves for garnishing
PROCEDURE:
- In a cooker put oil,saute onion slices,green chillies for 5 mins
- Add ginger garlic paste and fry till raw smell goes
- Add soaked rice ,fry for 5 mins,followed by garam masala,chopped carrot,salt and mix well
- Add 1.5 cups of water,lemon juice and mix well
- Close the lid and cook for 2 whistles
- Once the steam is released ,open the lid,add chopped coriander leaves and mix gently
- Serve hot with pepper mushrooms or raita!!
