Khajali/ Masala Mathri



Thanks to my FB friend Anjana Chaturvedi for this yummy recipe!! I love her blog Maayeka !!

INGREDIENTS:
1 cup maida/ refined flour
2.5 tblsp cooking oil
1/3 tsp cumin seeds/ sabut jeera
3/4 tsp pepper corns crushed coarsely
Salt to taste
Pinch of baking pdr
2 tsp ready made pickle masala

TO MAKE PASTE:
2 tsp cooking oil
2 tsp maida

PROCEDURE:
  • In a bowl add refined flour ,all the soices,cooking oil and mix well,add some water and knead to make a medium hard dough
  • Cover the dough with a lid and rest for 15 mins
  • Knead again and make small balls from the dough
  • In a bowl mix cooking oil and maida and make a paste
  • Roll the balls into thin rotis,take one roti apply some oil and flour paste all over it and sprinkle some pickle masala over it
  • Cover it with other roti and repeat the same procedure with other rotis (4 or 5 rotis)
  • Now roll it to make a log/ long roll,make thin slices from that log and keep aside
  • Press each slice with your palm to flatten it slightly
  • Deep fry in hot oil on a medium flame till it turns crisp and brown 
  • Store in an airtight contaner and enjoy with hot cup of tea or coffee !
NOTE: As I didnt get pickle masala i used the moxture of roasted jeera pdr,crushed pepper and chat masala !!
