Vegetable Kofta Curry with veg. pulav



INGREDIENTS FOR PULAV:
1 cup basmati rice soaked in water for 20 mins
5 tsp oil or ghee
2 lavang
a piece of cinnamon
1 bay leaf
1 sliced onion
2 green chillies slit
1/2 tsp turmeric pdr
1 tsp garam masala pdr
2 tsp ginger garlic paste
1/2 cup chopped veggies like beans ,carrot and some green peas
4-5 pudina leaves
3 tblsp chopped coriander leaves
Salt to taste

PROCEDURE:

  • In cooker heat ghee or oil,add lavang,cinnamon,bay leaf and onion slices and fry till transparent
  • Put green chillies ,ginger garlic paste and fry for 5 mins
  • Add turmeric pdr,garam masala pdr ,fry 
  • Drain water from rice and add to it ,fry for 5 mins followed by veggies 
  • Add salt,mix well,put 1.5 cups water and close the lid of cooker
  • cok for 2 whistles ,once the steam is released open the lid,add chopped pudina and coriander leaves 
  • Serve hot with curry or raita
INGREDIENTS FOR KOFTA CURRY:
FOR KOFTA:
2 medium boiled mashed  potatoes
1/4 carrot grated
1/4 cup green  peas boiled
!/2 tsp chilli pdr
1/2 tsp ginger garlic paste
Salt to taste
2-3 tsp corn flour
Mix ALL THE INGREDIENTS AND MAKE SMALL BALLS ,DEEP FRY INTO BROWN ,CRISP KOFTAS 

FOR THE GRAVY:
1 onion,1/2 inch ginger,2 tomatoes,4 garlic cloves,5 cashew nuts, 1 green chilli, boil all these ingredients with 1/2 cup water for 10 mins
Once it comes to room temperature ,grind to a smooth paste and keep

PROCEDURE:
  • Heat 4 tsp oil in a pan,put 1 chopped onion and fry till transparent
  • Add the masala ,fry for 5 mins
  • Add 2 tsp chilli pdr,1 tsp kitchen king masala ,1/2 cup milk, salt to taste and make it boil for 5 mins
  • Add 1/4 tsp kasuri methi,2 tsp frsh cream ,mix well
  • Adjust the consistency according to your taste,add fried koftas just before serving
  • Garnish with chopped coriander leaves!!!
