Paani Poori


Thanks to Master chef Sanjeev Kapoor for the recipe !!!
INGREDIENTS:
Crisp puffed pooris 40
1 .5 cups dates tamarind chutney
FOR THE FILLING:
1 cup boiled bean sprouts
2 large potatoes boiled and cut into small pieces
Black salt/ Kaala namak to taste
1 tsp chaat masala

FOR PAANI:
1medium bunch coriander leaves
1 medium bunch fresh mint leaves
5-6 green chillies
2 tblsp paani poori masala (ready made)
Black salt to taste
Salt to taste
1/2 tblsp roasted cumin pdr/ Bhuna jeera pdr
3 tblsp lemon juice
1/4 cup boondi or sev
PROCEDURE:

  • To make the filling combnine all th ingredients in a bowl,toss to mix well and set aside
  • To make paani grind coriander leaves ,mint leaves,green chillies into a paste using water as required
  • Transfer the ground coriander paste into a bowl,add pani poori masala,dry mango pdr,black salt,salt, cumin pdr,lemon juice and stir to mix well
  • Add 6 cups of water to the above mixture and keep in the fridge to chill
  • While serving add add boondi to the prepared paani and stir
  • Take one poori,break a little of the crust ,fill it up with a little filling,followed by half tblsp of dates chutney and sev
  • Dip the poori in the prepared paani and serve immediately..
  • Similarly prepare the remaining pooris and serve !!!
