Avarekaalu masala vada
INGREDIENTS:
1/2 cup hidkida avarekaalu / hyacinth beans (soaked and skin peeled)
1 cup chana dal
2 tblsp urad dal
2 onions finely chopped
4-5 green chillies
2 red chillies
2 sprigs of curry leaves
1/4 cup chopped mint leaves
1/4 cup chopped coriander leaves
Salt to taste
Oil for deep frying
PROCEDURE:
- Soak chana dal and urad dal in water for 2-3 hrs,drain water and grind dal with green chillies,red chillies,salt and 3/4 portion of the hyacinth beans
- Grind into a coarse paste,transfer it into a bowl
- Add chopped onions, remaining hyacinth beans ,chopped curry leaves,mint and coriander leaves
- Mix well, make vadas and heat oil
- Deep fry the vadas onto a crispy ones on a medium flame
- Serve hot with coffee or tea!!!
