Kaarate Gaud Nonche(bittergourd pickle)


INGREDIENTS:
2 kaarate/ bittergourds/ haagalkaayi
1 small raw mango 
2-3 tsp poha chutney masala or sambar pdr
Salt to taste
Jaggery to taste

FOR THE TEMPERING:
3-4 Tsp oil
1 tsp mustard
curry leaves
2 tsp urad dal
3 slit green chillies
1/2 tsp haldi

PROCEDURE:

  • Wash and cut the bittergourd into thin half roundels
  • Apply salt and keep for 30 mins ,after 30 mins squeeze out the water from bittergourd and cook with 1/2 cup  water ,in cooker for  whistles
  • In a pan heat oil and add mustard,when it starts crackling add curry leaves,urad dal and fry till it becomes light brown
  • Add haldi and raw mango pieces and cook ,once the raw mango pieces are cooked add  cooked bittergourd,salt,masala pdr and jaggery 
  • Add water to adjust the consistency,cook for 5-10 mins, till it becomes little thick 
  • Serve with hot rice and dal !!!
