Hara Bhara Pulav


INGREDIENTS:
1 cup basmati rice 
6 tsp oil or ghee
1 big onion sliced
1 finely chopped carrot
1/4 cup korn kernels
1 tsp biryani masala pdr
1/2 tsp turmeric pdr
Salt to taste
1 tsp lemon juice
Chopped coriander leaves for garnishing

FOR THE GREEN MASALA PASTE:
1/4 capsicum 
5-6 palak / spinach leaves
2 green chillies
1/2 inch ginger
5-6 garlic cloves
1/4 cup chopped coriander leaves
Grind the above ingredients into a fine paste and keep aside

PROCEDURE:

  • Wash and soak rice in water for 20 mins
  • In cooker heat oil,add sliced onions and saute till they turn transparent
  • Now add the masala paste and fry till raw smell goes
  • Add the veggies,spice powders and fry for 5 mins
  • Drain water from the ice and drop it into the cooker,fry for 5 mins
  • Add salt to taste,lemon juice and 1.5 cups water
  • Close the lid of the cooker and cook for 2 whistles
  • Once the steam is released open the lid and mix the pulav gently
  • Garnish with chopped coriander leaves and serve hot with raita.
