Lucknowi Biryani


INGREDIENTS:
1 cup basmati rice
7-8 french beans cut into pieces
1 small carrot cut into cubes
1 potato cut into cubes
2 tblsp fresh green peas
1 onion sliced
5-6 garlic cloves chopped
1/2 inch ginger chopped
2 slit green chillies
1/4 cup chopped coriander leaves
1/2 cup curds
1 bay leaf
1/2 inch cinnamon
2-3 cloves
8-10 cloves
8-1 pepper corns
2-3 pieces nutmeg mace
2 star anis
2 Badi elaichi
2 tsp rose water (I have not used )
Salt to taste
1/4 cup almonds and cashews
5 raisins
1/2 cup milk
4-5 strands of saffron
4 tblsp oil
3 tsp ghee

PROCEDURE:

  • In a bowl take warm milk and put the saffron strands, keep aside
  • In a vessel take 2 cups water and make it boil with  half of whole spices ,salt and soaked basmati rice
  • Cook the rice only 80% ,put the rice in a collander and drain all the water 
  • In a pan heat ghee and oil,add the remaining whole spices,green chillies,chopped garlic,ginger ,onion slices and saute for 5 mins
  • Add turmeric pdr,chilli pdr and fry for a minute
  • Now add the veggies ,mix well and add 1/2 cup water and cook with a lid covered till veggies are cooked
  • Now add salt to taste ,chopped coriander leaves ,curd and rose water if you are using
  • Now put the cooked rice over the veggies and spread neatly
  • Put the nuts,raisins,saffron milk ,chopped coriander leaves and 2 tsp ghee 
  • Cover the pan with a tight lid and cook for 15 mins on a low flame
  • And your biryani is ready to serve
  • Enjoy with any raita of your choice!!!
