Beetroot Halva
INGREDIENTS:
2 cups grated beetroot
1/2 cup milk
1/2 cup sugar
2 tblsp ghee
1 tsp cardamom powder
2 tblsp cashewnuts
2 tblsp raisins
PROCEDURE:
- Wash and peel off the skin of the beetroot and grate it using a grater
- Put the grated beetroot in a thick bottommed pan,add a tblsp of ghee and saute on a low flame for 10 mins
- Add milk,and keep stirring continuously on a medium flame for the milk to reduce
- Once the milk is reduced ,add sugar and it will become runny after adding sugar
- Keep stirring till the mixture thickens and becomes stickyand glossy
- Add the remaining ghee,cardamom powder
- Roast the nuts in little ghee and add to the prepared halvaand turn off the flame
- Serve hot or chilled .
