Chilli Garlic noodles with Mushroom Chilli


CHILLI GARLIC NOODLES
INGREDIENTS:
1 packet noodles
2 carrots cut into juliens
1 capsicum cut into juliens
6 tsp oil
8 garlic clovef finely chopped
1 tsp red chilli flakes
2 tsp vinegar
1 tsp soya sauce
Salt to taste
3tblsp finely chopped spring onion greens

PROCEDURE:

  • Cook the noodles as per the instructions on the packet
  • Heat oil ,fry garlic until light brown,add carrot ,capsicum juliens,with little salt on a high flame for 5 mins
  • Add prepared noodles and all the other igredients 
  • Toss well ,garnish with chopped spring onions
  • Serve hot .
MUSHROOM CHILLI 
INGREDIENTS:
1 packet mushrooms
5 tsp oil +oil for deep frying
2 onions cut into big chunks and separate the layers
2 slit green chillies
8 finely chopped garlic cloves
1/2 tsp red chilli pdr or red chilli paste
2 tsp soya sauce
1 tsp vinegar
2 tsp tomato ketchup
Salt to taste
Chopped spring onion greens

PROCEDURE:

FOR THE MARINATION:
Wash the mushrooms,cut into 2 pieces and marinate with 
3 tblsp corn flour
2 tblsp maida
Salt to taste
1/2 tsp pepper pdr
Make paste using little water ,marinate the mushroom pieces and deep fry 

  • Heat oil ,fry chopped garlic ,green chillies for 3 mins,add the onion petals
  • Saute for 5 mins on a high flame with little salt
  • Add all the sauces,chilli pdr,toss well
  • Add 1/4 cup water ,vinegar mix well ,add the fried mushrooms,salt if needed ,toss well
  • Garnish with chopped spring onion greens
  • Serve hot with noodles or any rice.
  • You can substitute mushrooms with paneer,potato,babycorn,prawns or chicken.
