Ghosale upkari Ridgegourd stir fry


INGREDIENTS:
2 ghosale/ ridge gourd/ heere kaayi
1 potato
4 tsp oil
1 tsp mustard
1/2 tsp hng/ safoetida
3 green chillies slit
Salt to taste

PROCEDURE:

  • Wash  and remove the skin of the ridgegourd,and cut into pieces
  • Peel the potatoes and cut into  small ,thin slices
  • Heat oil in a pan ,add mustard,when it crackles,add hing and green chillies
  • Fry for a second ,add potato slices,1/4 cup water and cook with a lid covered
  • Once it is half done,add salt and chopped ridgegourd,mix well and cook till it is cooked
  • Serve hot with rice and dal
