Mixed Veggie Upkari / Stir Fry


INGREDIENTS:
1/2 cup finely chopped cabbage
1/2 cup finely chopped carrot
1/2 cup finely chopped capsicum
1/2 cup finely chopped potato
1/2 cup finely chopped chow chow / seemebadane
1/2 cup finely chopped tendle/ gerkins
5 tsp oil
2 tsp mustard
1 tsp urad dal
4 slit green chillies
Salt to grated coconut

PROCEDURE:

  • Heat oil in a pan ,add mustard,once it starts crackling add chillies,urad dal and fry
  • Add chopped and washed veggies(drain all the water)
  • Add salt to taste,Sprinkle little water and close with a tight lid
  • Cook until the veggies are cooked,add grated coconut and toss well
  • Serve hot with rice and dal.
