Kumbh Matar ki Tahiri



INGREDIENTS:
1 Cup basmati rice
5 tsp oil or ghee
2 sliced onions + 1 onion
1/4 cup green peas/ matar
6 washed ,sliced mushrooms/ kumbh
2 lavang/cloves
1/2 inch cinnamon/ dalchini
1 cardamom
1 bay leaf
2 tsp ginger garlic paste
2 slit green chillies
1/2 tsp chilli powder
1 tsp coriander powder
1/2 tsp turmeric powder
1 tsp lemon juice
5-6 mint leaves
Salt to taste
Chopped coriander leaves
Fried nuts

PROCEDURE:

  • Wash and soak basmati rice in water for 15 mins
  • Fry 1onion sliced in oil till dark brown ,for garnishing .Keep aside
  • In cooker heat oil,add whole spices,saute for 2 mins,
  • Add sliced onions,saute till it becomes transparent,followed by ginger garlic paste and green chillies
  • Fry till raw smell goes,add spice powders and saute for a second
  • Add sliced mushrooms and green peas
  • Drain waterfrom the rice and add rice to it,fryfor 5 mins,add mint leaves,lemon juice,salt to taste and 1.5 cups water and mix well
  • Close the lid and cook for 2 whistles,once the steam is released ,open thelid and mix gently
  • Garnish with chopped coriander leaves and fried nuts
  • Serve hot with any raita of your choice.
