Ambya Upkari / Mango sweet curry


Ambya upkari / sweet mango curry is a Konkani delicacy prepared specially during summer, when mangoes are available in plenty.It is an absolut delight.

INGREDIENTS:
8 small variety mangoes (specially meant for making this curry)
3 green chillies slit
Jaggery to taste
Salt to taste
2-3 tsp maida

FOR THE TEMPERING:
3 tsp oil
1 tsp mustard
2 sprigs of curry leaves
2 red chillies cut into bits

PROCEDURE:

  • Wash and deskin the mangoes, add water to the peel and rub thoroughly till all the pulp from the peel is removed
  • Add this water to the de skinned mango.Add salt ,slit green chillies, jaggery  and boil well
  • Once the mangoes are cooked ,Mix maida in 1/4 cup water and add it to the cuury, mix well until the curry thickens
  • Cook for 2- 3 mins and turn off the flame
  • Add the tempering to the curry and your mango curry is ready to eat
