Karela / Bittergourd Masala Fry


INGREDIENTS:
1 big karela/ hagalkayi / bittergourd
5 tsp oil
2 chopped onions
2 green chillies
2 sprigs of curry leaves
1/2 tsp turmeric pdr
Salt to taste
Jaggery to taste
2 tsp tamarind paste
Chopped coriander leaves

TO BE ROASTED AND POWDERED:
1 tblsp mustard
6 methi/ fenugreek seeds
8 byadgi/ kashmiri red chillies
1/2 tsp oil
Roast these in oil and make fine powder and keep aside

PROCEDURE:

  • Wash karela and cut into thin roundels ,apply little salt and keep aside for one hour
  • Heat oil in a pan ,saute curyyleaves, chopped onions and slit green chillies till transparent
  • Squeeze water from the karela roundels and add it to the pan
  • Cover with a lid and cook till it becomes tender
  • Once the karelas are cooked add turmeric pdr,ground masala pdr as per taste, jaggery ,tamarind pulp
  • Mix well and cook furter for some time till te masala is well blended with karela and it is slightly roasted
  • Turn off the flame and garnish with chopped coriander leaves
  • Serve hot with rice and dal.
