Malabar spinach and Cashew Sukke




INGREDIENTS:
2 cups finely chopped malabar spinach / basale soppu / vaali
1/2 cup tender cashews or dry cashews soaked in water
2 small onions finely chopped
5 tsp oil
Salt to taste

For the masala paste:

1 cup fresh coconut gratings
chickpea size tamarind
4 red chillies and 3 tsp urad dal roasted in one tsp oil
Grind the above ingredients adding little water into a semi coarse paste

PROCEDURE:

  • Wash malabar spinach in water for 2-3 times and chop finely
  • Cook the chopped malabar spinach with cashew nuts , little salt and 1/2 cup water, in cooker for 2 whistles
  • Once it is cooked transfer it in a vessel, add the masala paste and let it boil for 10 mins
  • Turn off the flame.
  • Heat oil in a pan , add th chopped onions and fry till they turn brown in colour
  • Add this tempering to the prepared curry ,mix well and serve hot with hot rice and dal.
