Luchi with Dum Matar




Luchi is Bengali style fried puffed Indian bread prepared using maida.Luchi Aloo dum is a classic Bengali combination.

INGREDIENTS:

2 cups all purpose flour / maida
1 tblsp oil or ghee
Water as required to knead the dough
Salt to taste
Oil for deep frying

PROCEDURE:
  • Put maida, salt and 2 tblsp oil in a bowl and mix well with your hands
  • Now slowly add water as required and knead into a soft dough
  • Keep covered it for 20 mins. Devide the dough into lemon size balls
  • Roll into pooris. Deep fry rolled luchis in the hot oil on a medium flame
  • Serve hot with any sabji of your choice.
DUM MATAR INGREDIENTS:

1 cup boiled fresh green peas
4 tsp oil
1  finely chopped onion
1 finely chopped tomato
1/2 tsp turmeric powder
2 tsp red chilli powder
1 tsp garam masala powder
2 tsp kasuri methi
1/2 cup curd
Salt to taste
Chopped coriander leaves

FOR THE MASALA PASTE:
1 roughly chopped onion
4 garlic cloves
1/2 inch ginger piece
8 cashew nuts
Boil chopped onion and cashew nuts with half cup water for 5-10 mins
Once it comes to room temperature grind it with garlic and ginger. Make a smooth paste.

PROCEDURE:
  • Heat oil in a pan , saute chopped onions till it turns light pink
  • Add chopped tomatoes and fry till they turn mushy
  • Now add the ground masala paste and fry it for 5 mins
  • add the spice powders one by one and saute on a low flame for 5 mins
  • Put the boiled peas, curds, salt and mix well
  • Let it boil for 5- 10 mins
  • Add kasuri methi and chopped coriander leaves, mix well and turn off the flame
  • Serve hot with luchi.
