Fried rice with Chilli garlic veggies


INGREDIENTS:
For fried rice:
1 cup bullet rice or sona masoori
4 tsp oil
4 finely chopped garlic cloves
1/2 cup finely chopped veggies like beans,carrot,capsicum
1 onion slices
1 tsp vinegar
1/2 tsp pepper pdr
1/2 tsp ajinamoto (optional) I don't use.
Salt to taste
2 tblsp finely chopped spring onion greens

PROCEDURE:

  • Wash rice and cook in cooker with salt to taste and 2 cups water. Cook for 3 whistles
  • Once cooked spread it on a plate and keep aside
  • Heat oil in a kadai, add chopped garlic and saute for 2 mins, followed by sliced onions
  • Saute for 2-3 mins on a high flame,add veggies with little salt and cook for 2-3 mins
  • Don't overcook the veggies, it should be crunchy.
  • Now add the cooked rice,vinegar,pepper pdr, and toss well
  • Finally garnish with chopped spring onion greens and serve hot.
INGREDIENTS:
1 cup chopped veggies like carrot, beans,capsicum,baby corn
1 onion (cut into big dices and separate the layers)
1 slit green chilli
1/2 inch ginger finely chopped
6 garlic cloves chopped
4 tsp oil
2 tsp soya sauce
1 tsp tomato sauce
1/2 tsp vinegar
1  tsp CHING'S Chilli masala powder or manchurian masala 
1 tsp CHING'S Schezuan chutney
Salt to taste
2 tsp corn flour
Finely chopped spring onion greens for garnishing

PROCEDURE:
  • Heat oil in a pan ,put chopped garlic,ginger, green chillies and saute for 2 mins
  • Add chopped onion and saute for 2-3 mins , followed by carrot, beans and baby corn Cook on a high flame for 3-4 mins, now add capaicum and saute for 2 mins, add salt to taste
  • Put soya sauce, tomato sauce, vinegar, Chings  schezuan chutney , mix well and add 1/2 cup water and mix
  • Add water according to your taste ,if u want dry no need to add water
  • If you want more gravy then increase the quantity of water
  • Add Ching's masala powder. Mix corn flour in 1/4 cup water and add to it and let it boil
  • Once the gravy thickens, boil it for 2-3 mins on a low flame , garnish with spring onion greens and turn off the flame
  • Serve hot with fried rice or noodles and enjoy.
  • You can substitute veggies with paneer, mushrooms,prawns or chicken.
